Fresh fruit composition with vanilla oil

Ingredients:
80 g of pomelo
80 g of pear
80 g of pineapple
80 g of plums
100 g of orange
100 g of mandarin
20 g of juice prickly pear
80 g of apple
80 g of kiwi
80 g of banana
80 g of grapes
60 g of pomegranate
For the vanilla oil:
1 vanilla pod
50 g of water
50 g of sugar
50 g of extra virgin olive oil
olive oil Garda DOP
Preparation:
The fruit should be washed and finely chopped into small slices.
For the vanilla oil: halve the vanilla pod, put it in boiling water and sugar, allow to cool and add oil in a thin as mayonnaise.
In a pot large enough to have the fruit elegantly alternating colors and textures; drizzle with the vanilla oil.
