Red fruit soup with Garda Dop extra virgin olive oil ice-cream

Ingredients for 4 people:
300 g of water
120 g of sugar
20 g of basil
10 g of green pepper
250 g of strawberry pulp
For the oil ice cream:
300 g of fresh whole milk
10 g glucose
70 g of sugar
30 g of milk powder
70 g of fresh cream
50 g of extra virgin olive oil Garda DOP
Preparation:
Boil water, sugar, basil and green pepper for 5 minutes.
Allow to cool and add the chopped strawberries.
Keep refrigerated.
For the ice cream: bring the milk to a temperature of 60 ° C, pour the sugar, milk powder and sugar and continue to warm.
Once the temperature of 80 ° C add the cream.
Blend with hand blender and mix into ice cream pouring oil flush.
Fill a bowl with red fruits to taste, pour the liquid is very cold and decorate with a scoop of ice cream oil.
